Vegetarian Sloppy Joe Sandwiches

This is a quick and inexpensive hot vegetarian sandwich for all occasions - family suppers, potlucks, cookouts, parties and more.

INGREDIENTS:

  • 1/2 c. onion, peeled and diced
  • 1/4 c. green pepper, seeded and diced
  • 1/4 c. carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1 Tbls. extra-virgin olive oil
  • 12 oz. frozen soy crumbles
  • 6 oz. tomato paste
  • 1/2 c. water
  • 1 tsp. prepared mustard
  • 1 tsp. soy sauce
  • 1/2 Tbls. brown sugar
  • 1/2 tsp. cumin
  • 1/4 tsp. paprika
  • 4 hamburger buns

PREPARATION:

Saute onion, green pepper, carrots and garlic in oil by cooking over medium-low heat while covered for about 5 minutes. Add frozen soy crumbles and continue to cook until thawed, another 5 to 10 minutes. Meanwhile, in a small mixing bowl, combine tomato paste, water, mustard, soy sauce, brown sugar, cumin and paprika. Stir until thoroughly incorporated. Add sauce to soy crumbles and mix well. Let mixture simmer for 10 to 15 minutes. Spoon generous portions onto buns. Makes 4 sandwiches.
