I was delighted to meet vegan chef Chloe Coscarelli today, when she did a book signing at a local supermarket. You probably remember her as the first vegan to win Cupcake Wars. Coscarelli was as warm and bubbly as she appears on TV and spent time speaking with everyone who came to see her. The supermarket gave out seemingly endless trays of free vegan cupcake samples to all shoppers as they entered the store, and I overheard so many pleasantly surprised people say, "This is vegan?!" Her new book, Chloe's Vegan Desserts (Buy Direct) is available now.
What do vegan desserts have to do with animal rights? A vegan cupcake - even an award-winning cupcake - may not convince people that animals are deserving of rights, but if we can open people's minds about vegan food, it can lead to more people going vegan as well as people eating less animal products in general, even if they don't go vegan.

What??? Cupcakes? I didn’t get any cupcakes! I got there at 1pm; maybe they were gone?
Chloe was delightful, as was her mom. She is beautiful inside and out. I can’t wait to try the truffles dipped in chocolate she made on the “Today” show!
My wife, who has morphed into one of the best vegan cooks ever, was very proud and pleased when the war was won by a vegan. All victories are to be celebrated. One never ever knows ahead of time what will start the ball rolling in the direction of a vegan world in the hearts and minds…or stomachs…of those not there yet..
